Millionaire Shortbread Recipe

Millionaire shortbread has a buttery crust, gooey caramel filling, and rich chocolate ganache. These bars are rich, hence the name!

– 1 cup unsalted butter softened (230 grams) – ½ cup granulated sugar (100 grams) – 2 large egg yolks at room temperature – ¼ teaspoon salt – 2 cups all-purpose flour spooned & leveled (250 grams)

For the cookie dough, heat the oven to 350°F (180°C). A 9x13-inch baking pan should have a lip on the edge to make it easy to take out.

In a stand mixer with the paddle attachment or a big bowl with a hand mixer, beat the butter and sugar for two minutes.

Scrub the bowl as you stir in the egg whites and salt. Add flour slowly until it turns into crumbs. Spread the crumbly mixture out evenly in the baking pan.

After 23 to 28 minutes, the sides should be a light golden brown color and the top should be set.  Put baked goods on a metal rack to cool down. It will cool down faster on a wire rack in the fridge.
